With 3 growing boys now in my house, yes I added Matt as growing, don't tell him...he may go on strike from eating my food;). Anyhow....I missed you all and here I am, back at it...first things first...the BLOG...dun dun dahhhhh....here it is! ENJOY!
Chicken bacon Alfredo! (Matt's all time favorite)

This meal is not the best for you, but it is one of the best, if that makes sense! I love eating good fatty home cooked meals! I'm sorry for all you health nuts...creamy chicken and bacon sounds 550% better than a garden salad with dressing that tastes like water, and only covers a couple leafs!

I hope everyone is having a nice week so far....or at least surviving monday! I have a tasty maranaid that i mixed up this week...if youre anything like me, you like a little extra taste to your meat, although at times just simple rub of oil and sprinkled with salt and pepper is mighty tasty too:). Anyway...this was used on chicken but my husband matt also thought to try pork...we havent yet so if you do...it was his idea. Personally i like just a plain season salt on mine with some onions, but thats the fun with cooking....you give things a twist of your own idea and if it doesnt work, you send it to your neighbors who just moved in....they will eat anything:).

What you need,
4 boneless chicken breasts
1 cup of water
1/2 cup of veg. Or olive oil
1 large ziplock bag
3 tbs of dry onion or 1/4 of a onion chopped
2 tbs of garlic powder
1 tsp of season salt
1 tbs of pepper
1 tbs of salt
1 tbs of parsley

To prepare,
Mix oil, water and ingredients in bowl
Pour into ziplock
Toss in uncooked chicken and skake together...
For best results let sit in fridge over night, you can also let it stand as little as 40 min. But the longer the better! I put ours in at 9pm and we grilled them at 6 pm the next day!

Grill for about 7 min. Each side or until no longer pink!
Serve with mixed veggies!
Or if you really want you go out you can add cooked linguini noodles and alfredo sauce, add whichever veggies you prefer...cut up cooked chiken and serve!!!

Happy cooking!

After serving him pb and j the last 2 weeks....no lie. I decided he needed to step outside the box :) and I took the leap....I remember being at one of my moms house parties and somebody brought this....not sure who so I don't know who to give credit to so let's just say me.....kiddingggggg....any who,
What you need...

12 ounces uncooked linguine
2 pounds chicken breast strips or breast
1 tablespoon Cajun seasoning
1 1/4 teaspoons salt, divided
1/4 cup butter
1 bag of fajita mix. Whatever you prefer
1/2 chopped onion, if not in fajita mix
1 1/2 cups half-and-half
1/4 teaspoon lemon pepper
1/4 teaspoon dried basil
1/4 teaspoon garlic powder

How to make...

Melt 1/4 cup of butter in big saucepan, sprinkle chicken with Cajun spice (while raw) cook on saucepan until done. I usually add more cajun I like it hot :) remove chicken from pan, add fajita mix, stir 7 minutes in pan add chicken back, pour in half and half, basil garlic powder and the rest of the salt...add COOKED linguini noodles, stir together. I added 1 to 2 tablespoons of corn starch as I like my pasta sauce thicker....also added a pinch more of Cajun :). Dish up and enjoy! If you're not a fan of spicey, you could coat the chicken in garlic instead!!!

Croc pot
4 pork chops, I used bone but without will be better as you don't have to worry eating small bones...croc pots break everything apart, but leave small bones.
1 can chicken, beef broth or I used 4 tbs of vegetable powder mixed with 2 cups of HOT water
3 tbs garlic
3 tbs season salt
3 tbs paprika powder
1/2 cup of flour
1/2 cup sour cream
1 1/2tbs corn starch
Onion...what you please chopped, I used half cup

Mix garlic season salt, paprika, salt and pepper in biggest zip lock bag....add all pork chops...shake until covered... Place chops in crock pot, add broth...whichever you choose, add onion. Let sit on low covered for 5 hours

Mix sour cream and cornstarch together...add to crock...slowly stir in, not to break apart pork

Let sit another hour, and serve

I served mine with mashed potatoes and chives , you can use rice also

And green beans, this meal makes not only the chops but gravy too.....
Yum Mmmm... Happy eating, and fast forks!!!!

Like not Family not friends but a new newwwww person? I let matt invite a man he does webwork and marketing for dinner tonight...the pork chop meal, the meal I have never made or tried in my life. I swear I felt like I was having president Obama or Marie Claire over or something. At least I have a newborn....or somewhat of a newborn???? I can say he kept me up all night, or he cried the whole time I was trying to cook! Thank god everything turned out perfect, even more than perfect.... He went back for THIRDS! Holla. Thus the reason I made this blog....all this food, honestly if I can make it anyone can. I do have a knack on what spices to use and when and I give my mom that credit, she never made a dull meal. Ilove cooking, but I want to know its gonna be darn good or I'm not wasting my time. They say food is the way to a mans heart? If so I'm flowing through the arterys as we speak! I'll get there...I'd say about now were in the colon though...I like my food spicy, flavorful and lots of it. :) healthy food is good, and good for you but excuse my language so fucking blahhhhhh! There are a few I like though, and one is cabbage Hotdish which I will also post! Anyhow...wanted to chat or rant a bit...on to posting this delish pork chop delight..... Whatever shall I name it????? Anyone???

I add a bit more spice than she did...;)

What you need

1 lean beef
2 small cans of tomato paste
1 box of spaghetti noodles, whichever you prefer...I like regular
1/2 cup of Parmesan cheese
2 tbs parsley
1 tbs garlic powder
1 tbs salt
1 tsp pepper
1 dash of sugar
1 tsp basil
2 eggs
3 tbs of olive oil
3 cans (use your tomato paste) of hot water

In separate bowl prepare your sauce

Mix olive oil, tomato paste, cans of water, basil, salt pepper and sugar...mix well

This is messy so take off any jewelry! Start by mixing your raw hamburger with you Parmesan cheese, mix the 2 eggs in, add garlic, parsley, and 1 tsp of salt....mix well ( with hands)once ready either make into balls and put them I. Saucepan to fry or place the whole mixing into saucepan and ground (I like it this way) brown meet until it is cooked, place on low then add your sauce, stir together and cover to let sit for 1 hour!

I like to make my own garlic bread using a loaf of Italian bread, cut as thick or thin as you please, spread butter add garlic and little basil, you can add cheese also if you would like, bake at 375 for 8-9 minutes!

Boil noodles!

Dish up and eat until you POP!!!

- a fun way to get your kiddie to eat is to make spaghetti sandwich....using your bread and spaghetti!

I am asked to bring this to every gathering, and it's no lie, gone in less than a half hour! SOOOO....here we go

What you need
1 rotisserie chicken
1 bottle of franks buffalo sauce
1 16oz bottle of ranch (fat free if you would like)
1 pack of cream cheese (low fat if you would like)
1 bag of montery jack cheese

Start by shredding your chicken, I take all the skin off but you dint have to. Place in oven safe bowl (bigger) pour whole bottle of franks sauce and mix with chicken. Mix bottle of ranch and cream cheese on the stove, I find it easier to heat when mixing, pour on top of chicken mix....do not mix with buffalo chicken! Sprinkle cheese on top, I use half a bag but you can use whole! Set oven for 375 and bake for 20 min....OR until cheese bubbles!

Let sit and cool and enjoy, nom nom nom!!!

Serve with corn chips or celery sticks, you can also add small pieces of celery to the top of dish!

Yummy!Today was one of those days I didn't feel like doing much with my dinner....not only was I trying to figure this blog stuff out all day but.....ok I was just trying to figure this out, literally ALL day, don't judge...a great dinner came out of it :) I was trying to think of a fast croc pot dinner....that could sit and cook on it's own! I remember going to a birthday party and having steak tacos that with the steak cooking in salsa and then Chopped, it was wonderful! I decided to try chicken...I mixed it with salsa, found a packet of taco seasoning that I bought on sale and decided to add cream cheese to take the spice away...for the little guy :). It turned out great, I like to add retried beans or rice as my side dish but chips and melted cheese is very tasty also and the kids like it! Here was how she became.......

What you need:
16 oz jar of salsa....whichever you prefer
4 chicken breasts...boneless
1/2 a bar of cream cheese
1 pack of tao seasoning

Pour half the jar of salsa in the croc pot, place chicken breasts on top, sprinkle taco mix on top of the chicken, top off with the rest of the salsa, and put slab of cream cheese on top!
Cover and cook on low for 5 to 6 hours! About half way through, shred chicken with fork, stir into mix and let sit another hour!

Then serve up with your choice of sides.

I also like to use the big tortilla shells, soft!

Enjoy!

And that my friends was music to my ears, I didn't have to cook and worry about spending an hour on something only to have it not turn out or have a very extra hungry husband who didn't like my food! Now you have to remember, growing up my mom was kitchen diva queen to the highest level....always trying new dishes, making dessert and then doing dishes. I found that ok, but as I grew up, got married and had kids of my own, it was more difficult! Matt (my husband) bless his heart, is so picky....he doesn't like sweet sauce, he hates creamy ranch or cream cheese sauces, he gets sick of food fast....blah blah blah :). My 3 Year old....well that number just says it all! After looking at different recipes online, I thought to myself....this looks good, and if it's not....I can just blame the other ding dong mom who made it, YESSSSSSS! After trying the "good" ones, I had a happy family but needed to adjust to make everyone happy, either by adding cheeses, hot sauce or more tame sauces! This blog is not only going to teach you only the best tasting family faves, but also ways to accommodate the whole family, kids too! I hope you all enjoy as much as I'm sure I will!!!!! Heres to fast forks, full bellies and no need to even ask for dessert :)
