Chicken bacon alfredo

Wow, so here I am, almost a year later...posting, food, recipes!  So much has been happening in the Johnson house, and all for the better!  Although things change, cooking never stops!  With 3 growing boys now in my house, yes I added Matt as growing, don't tell him...he may go on strike from eating my food;). Anyhow....I missed you all and here I am, back at it...first things first...the BLOG...dun dun dahhhhh....here it is!  ENJOY!


Chicken bacon Alfredo!  (Matt's all time favorite)
This meal is not the best for you, but it is one of the best, if that makes sense!  I love eating good fatty home cooked meals!  I'm sorry for all you health nuts...creamy chicken and bacon sounds 550% better than a  garden salad with dressing that tastes like water, and only covers a couple leafs!   

What you need:
Package of chicken( I use stir fry or strips) but breasts will do...men get your mind outta the gutters!
1 cup Alfredo sauce
7 strips cooked bacon (or bacon bits)
Vegi oil. Enough to fry
3 tablespoons mayo
1 tablespoon  parsley
1 tablespoon Parmesan cheese
1 cup Colby cheese
Salt and pepper to taste
1 teaspoon basil
1/2 chopped onion

Prepare:
Mix in bowl mayo, bacon, cheese (half) and parsley
Dip chicken in bread crumbs and cook over medium heat until brown
Place chicken in oven safe bowl and spread paste on top of chicken
 Add cooked onion and Poor Alfredo over entire chicken sprinkle with leftover cheese
Cook in oven at  375 for 30 minutes
top with basil

Serve with veggies!  This is a FILLING meal, I suggest veggies or Italian bread!

Garlic and herb grilled chicken

Good afternoon friends:). I hope everyone is having a nice week so far....or at least surviving monday! I have a tasty maranaid that i mixed up this week...if youre anything like me, you like a little extra taste to your meat, although at times just simple rub of oil and sprinkled with salt and pepper is mighty tasty too:). Anyway...this was used on chicken but my husband matt also thought to try pork...we havent yet so if you do...it was his idea. Personally i like just a plain season salt on mine with some onions, but thats the fun with cooking....you give things a twist of your own idea and if it doesnt work, you send it to your neighbors who just moved in....they will eat anything:).

What you need,
4 boneless chicken breasts
1 cup of water
1/2 cup of veg. Or olive oil
1 large ziplock bag
3 tbs of dry onion or 1/4 of a onion chopped
2 tbs of garlic powder
1 tsp of season salt
1 tbs of pepper
1 tbs of salt
1 tbs of parsley

To prepare,
Mix oil, water and ingredients in bowl
Pour into ziplock
Toss in uncooked chicken and skake together...
For best results let sit in fridge over night, you can also let it stand as little as 40 min. But the longer the better! I put ours in at 9pm and we grilled them at 6 pm the next day!

Grill for about 7 min. Each side or until no longer pink!
Serve with mixed veggies!
Or if you really want you go out you can add cooked linguini noodles and alfredo sauce, add whichever veggies you prefer...cut up cooked chiken and serve!!!

Dorrito casserole!!!! Soooo good

So, i know i have been neglecting you lovely bloggers but its been hectic around here...we have been living off of sandwitches the past week, lol! Anyhoo, on to the good stuff! This dish was so tasty, and very easy....who cares if you have to do a few more sit ups tonight ;)

What you need
1 can evaporated milk
1 can cream of chicken
1 can cream of mushroom
1 med. Bag of doritos...crushed
1 small onion
Hamburger
1 packet of taco seasoning....if you want, i decided to try it and it was magnif
1 small can mashed tomatos..or just tomato sauce
1 bag shredded cheddar cheese


To prepare....

Set oven to 375
Spray caserole dish with pam
Brown hamburger with onion, you dont have to get it 100% done as it will cook in oven but enough to not see red.
Stir in ALL other ingredients but the cheese, include the chips, stir until well mixed pour in caserol dish and bake for 30 min, sprinkle cheese ontop and cook another coUple minutes, until cheese is melted!!!! Enjoy! I didnt serve any sides with ours as it was filling enough! If you like spicy you could ass pepperjack cheese or peppers!

Veggie pizza. Kids LOVE

So lately, I have been running out of ideas for lunch....with Jack. Cooking for a 3 year old is like cooking for a wolf pack, they are hungry but no time to sit, and you get one chance to impress....ONE, so you better make it good! After serving him pb and j the last 2 weeks....no lie. I decided he needed to step outside the box :) and I took the leap....I remember being at one of my moms house parties and somebody brought this....not sure who so I don't know who to give credit to so let's just say me.....kiddingggggg....any who,

What you need..
Package of pillsbury crescent rolls
1 pack of cream cheese
Veggies, whichever you like......I like carrots, tomatoes, cauliflower and broccoli

Roll out the rolls like a pizza , bake in oven at 375 for 15 min...or until risen...take out and cool....spread warmed up cheese all over dough....


Chop veggies finely....I use a pampered chef chopper....super fast!


Sprinkle veggies on top of pizza....cut into squares and serve. Yum

Shredded beef and onion....SUPER EASY

What you need...

1 chuck roast
1 can of beef broth
1 packet of onion Lipton soup mix
1 tbs pepper

This takes about 9 hours to cook in the croc pot so start early....:) can you tell I loooooove my croc pot, so easy when you have 2 kiddies running around!

What to do...
Pour beef broth in croc pot....place chuck roast in, cut off any extra fat first....lightly pepper and cover and cook low for 8 hours. Tear apart roast with forks, shredding up. Add packet of onion mix and the pepper, mix and cover for another hour on high.

Serve with buns...the onion ones are good...add slice of cheese for kids while still warm to melt! Serve with something light...beans, chips, potato salad, corn on cob, coleslaw....

Pizza rolleos ( fun for kids)

What you need..

1 container of creasent rolls
1 pack of pepperoni
1 jar of tomato sauce....I just use spaghetti sauce
1 tbs basil
1 tsp garlic
1 tbs olive oil
1/4 cup Parmesan cheese
1 1/2 cups shredded mozzarella

Roll out creasent roll dough...about 10 in both ways
Spread sauce cover fully,as much as you would like
Place pepperoni, you could used cooked ham, sausage or whatever...place as many as you would like.
Sprinkle cheese covering dough, sprinkle garlic all over

In flat bowl, plate would work, mix Parmesan cheese and basil on plate

Roll crescent as tight as you can, cut 1 to 2 inch pieces , roll pieces lightly in oil and roll in Parmesan mixture.

Place on baking sheet, set oven for 350 and bake for 12 to 15 minutes...longer if crust hasn't risen but make sure cheese isn't leaking everywhere!!!!
